Stir-fried Broccoli Slaw aka The GOAT

This Asian inspired side dish is so fast, so easy, and tastes incredibly fresh with awesome umami flavor.

Random fact, I don’t like Chinese takeout. Not to yuck your yum but it just doesn’t do anything for me except upset my stomach and turn my fingers into sausages from all the sodium. I do, however, LOVE fresh Asian flavors like those found in my stir-fried broccoli slaw. This side dish is so fast, so easy, and tastes incredibly fresh and bright with awesome umami flavor. I love it served hot, with or without rice, and I especially love it cold on salads. I’m one of those people who can eat the same thing on repeat and not really get sick of it… THIS is one of those things. If you follow me on IG, you see it on my salad all the time and now you can add it to your arsenal of awesomeness too! It pairs great with just about any protein from chicken or ground turkey, to salmon or spruced-up canned tuna in a pinch. But, I particularly love it with sautéed or grilled shrimp. If you want a bit of a crunch, add roasted peanuts, cashews, or sesame seeds. Get cookin’ and enjoy!

INGREDIENTS:

1 package store-bought broccoli slaw

1 inch peeled and grated ginger or 1tsp ground

1 clove chopped garlic or 1tsp granulated

2-3tsp rice wine or raw apple cider vinegar

2-3tsp liquid aminos or soy sauce *sub coconut aminos for soy-free

1/2 bunch chopped fresh cilantro

Avocado oil cooking spray (I use the brand Chosen Foods)

METHOD:

Heat a pan over high heat. Give a generous spray of avocado oil and add broccoli slaw. Cook until tender and translucent (but not soggy… no soggy veg here), stirring frequently, around 5-7 minutes. Add ginger and garlic, toss, and cook another minute. Add vinegar and aminos, immediately remove from heat and stir in cilantro. Serve immediately or keep refrigerated.
